Budget Week: 5 Dinners, One Grocery Trip, Under $75

Welcome to Batch Please! If you're tired of the 5 PM "what's for dinner?" panic, you're in the right place. This week you'll cook once — about 75 minutes on Sunday — and walk away with five real dinners for four people, all from a single grocery trip that costs less than a family night out. No fancy ingredients, no complicated techniques, just good food that reheats well and actually fills you up. Let's get your fridge stocked.


Dinner 1: Hearty Turkey & Black Bean Chili

Total time: 45 minutes (mostly hands-off simmering)

  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the ground turkey and cook, breaking it into crumbles with a wooden spoon, until no pink remains — about 6–7 minutes. Drain off any excess liquid.
  2. Add the diced onion and bell pepper to the pot. Cook, stirring occasionally, until softened — about 5 minutes.
  3. Stir in the garlic, chili powder, cumin, and smoked paprika. Cook for 1 minute, stirring constantly, until fragrant. (This quick toast wakes the spices up.)
  4. Pour in the crushed tomatoes, black beans, and chicken broth. Stir well and bring to a gentle boil.
  5. Reduce heat to low, partially cover, and simmer for 25 minutes, stirring every 5–10 minutes so nothing sticks. The chili should thicken slightly.
  6. Taste and season with salt and pepper. Serve as-is, or over rice if you like.

Dinner 2: Cheesy Chicken & Rice Skillet

Total time: 40 minutes

  1. Pat the chicken pieces dry and season with garlic powder, onion powder, salt, and pepper.
  2. Heat the olive oil in a large deep skillet or sauté pan over medium-high heat. Add the chicken and cook until golden on the outside, about 5–6 minutes. It doesn't need to be cooked through yet — just get some color on it.
  3. Stir in the uncooked rice and cook for 1 minute, stirring, so the grains get lightly toasted.
  4. Pour in the chicken broth and add the cream of chicken soup. Stir until the soup dissolves into the liquid. Bring to a boil.
  5. Reduce heat to low, cover tightly, and simmer for 18 minutes. Don't lift the lid — the steam is doing the work.
  6. Remove from heat. Stir in the frozen peas and carrots (they'll thaw in the residual heat) and let stand, covered, for 5 minutes.
  7. Sprinkle the cheddar over the top, cover for 2 minutes to melt, then serve.

Dinner 3: Turkey Meatballs with Spaghetti

Total time: 45 minutes

  1. Preheat the oven to 400°F. Line a rimmed baking sheet with foil and lightly oil it.
  2. In a large bowl, combine the ground turkey, breadcrumbs, egg, Parmesan, garlic, Italian seasoning, 1 teaspoon salt, and ½ teaspoon pepper. Mix with your hands just until combined — stop as soon as it comes together. Overmixing makes tough meatballs.
  3. Roll into 16 meatballs (about golf-ball size) and arrange on the baking sheet, spaced an inch apart.
  4. Bake for 18–20 minutes, until browned and cooked through (165°F inside if you have a thermometer).
  5. While the meatballs bake, bring a large pot of salted water to a boil. Cook the spaghetti according to package directions until al dente. Drain, reserving ½ cup of the pasta water.
  6. Warm the marinara in a large saucepan over medium heat. Add the baked meatballs and simmer gently for 5 minutes so they soak up the sauce.
  7. Toss the spaghetti with the sauce and meatballs, adding a splash of pasta water if the sauce needs loosening. Serve with extra Parmesan.

Dinner 4: Sausage, Potato & Veggie Sheet Pan

Total time: 45 minutes (10 minutes hands-on)

  1. Preheat the oven to 425°F. Line a large rimmed baking sheet with foil for easy cleanup.
  2. Spread the halved potatoes on the baking sheet. Drizzle with 1 tablespoon of the olive oil, sprinkle with half the Italian seasoning, garlic powder, salt, and pepper. Toss to coat and spread into a single layer.
  3. Roast the potatoes alone for 15 minutes. (They take longer than everything else — this head start matters.)
  4. While the potatoes roast, toss the sausage coins, bell peppers, onion wedges, and zucchini in a large bowl with the remaining tablespoon of olive oil and the rest of the seasonings.
  5. Pull the pan from the oven, push the potatoes to the sides, and add the sausage-veggie mixture to the center in a single layer.
  6. Return to the oven and roast 18–20 minutes more, until the potatoes are crisp-edged and fork-tender and the sausage is browned at the edges. Serve straight from the pan.

Refrigerate up to 4 days. The best reheat is a hot skillet or the oven at 400°F for 8–10 minutes — it crisps the potatoes back up. Microwave works too; expect softer potatoes but the same great flavor.


Dinner 5: Beefy Burrito Bowls

  1. Cook the rice according to package directions (1½ cups rice + 3 cups water, simmer covered about 18 minutes). Fluff with a fork and keep covered.
  2. While the rice cooks, heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart, until browned — about 6–7 minutes. Drain off excess fat.
  3. Stir in the chili powder, cumin, garlic powder, and oregano. Cook 1 minute, stirring, until fragrant.
  4. Add the black beans, corn, and salsa. Stir well and simmer for 5–7 minutes until everything is hot and the flavors come together. Taste and add salt if needed.
  5. Build bowls: scoop rice into bowls, top with the beefy bean mixture, and sprinkle with cheddar so it melts over the top. Add extra salsa at the table.

Your Sunday Prep Timeline (~75 minutes)

0:00 — Get everything going. Preheat the oven to 425°F. Put a large pot of salted water on high heat for the spaghetti. Start the rice for the burrito bowls (1½ cups rice + 3 cups water) in a medium pot — bring to a boil, then cover and reduce to low.

0:05 — Chop everything at once. Dice 2 onions. Cut 4 bell peppers into pieces. Slice the zucchini into half-moons. Halve the baby potatoes. Mince 5 cloves of garlic. Cut the chicken thighs into bite-size pieces. Slice the sausage into coins. (One big chopping session beats five small ones.)

0:20 — Sheet pan goes in. Toss the potatoes with 1 tbsp olive oil and half the Italian seasoning, garlic powder, salt, and pepper on a foil-lined sheet pan. Roast alone for 15 minutes.

0:25 — Chili on the stove. Brown 1 lb ground turkey in your biggest pot. Add half the diced onion, 1 diced bell pepper, and half the garlic. Stir in chili powder, cumin, and smoked paprika, then the crushed tomatoes, 2 cans black beans, and 1 cup chicken broth. Bring to a boil, reduce to low, partially cover, and let it simmer.

0:35 — Meatballs in the oven. Mix and roll 16 turkey meatballs (ground turkey, breadcrumbs, egg, Parmesan, remaining garlic, Italian seasoning). They go on a second foil-lined sheet pan into the 425°F oven for 18–20 minutes. (Two pans can share the oven — put the sheet pan dinner on the lower rack.)

0:40 — Sheet pan, round two. Pull the potato pan, push potatoes aside, add the sausage, remaining bell peppers, onion wedges, and zucchini tossed with the rest of the oil and seasonings. Back in the oven for 18–20 minutes.

0:45 — Burrito bowl beef. Brown the ground beef in a large skillet, drain, add taco spices, then beans, corn, and salsa. Simmer 5–7 minutes. Set aside. Fluff the rice — it's done.

0:50 — Spaghetti water should be boiling. Drop the spaghetti in. Warm the marinara in a saucepan.

0:55 — Pull the meatballs. They're done — add them to the warm marinara to simmer. Check the sheet pan: potatoes crisp, sausage browned? Pull it.

1:00 — Drain the pasta, toss with marinara and meatballs.

1:05 — Chicken & rice skillet. Sear the seasoned chicken pieces in a deep skillet, add the remaining 1½ cups uncooked rice, broth, and cream of chicken soup. Boil, cover, simmer 18 minutes.

1:10 — Portion the finished dishes. While the skillet simmers, divide the chili, burrito bowl components (rice and beef mix in separate containers), sheet pan dinner, and spaghetti with meatballs into sealed containers. Label with the day you plan to eat them.

1:25 — Finish the skillet. Stir peas and carrots into the chicken and rice, rest 5 minutes, top with cheddar, portion it out. Done — five dinners in the fridge.

Tip: Let everything cool about 20 minutes before sealing and refrigerating. Eat within 4 days, or freeze the chili, meatballs, and burrito beef mix for later.
